What are tocopherols and tocotrienols?

Tocopherols and Tocotrienols are both vitamin E, naturally soluble in oil, and well known for their antioxidant abilities. Antioxidants are always recognized for fighting free radicals in our bodies.

Differing by their chemical structures, Tocotrienols can be found abundantly in palm oil and come with benefits beyond Tocopherols.

What are Carotenes?

Carotenes are Provitamin-A. Provitamins are substances that are converted by the body into vitamins. In simpler words, carotenes are Vitamin A! Known as an essential nutrient for good eye health, it is also a powerful antioxidant. Carotenes are also responsible for the red to orange color you see in plants.

Where can I get these Carotenes?

Red palm oil is viewed as one of the amplest sources of natural carotene. The Provitamin-A content in red palm oil is 15 times more than in carrots and 50 times more than in tomatoes! Brown Sugar (sugar level adjustable to fit your desired sweetness) 25

Shredded Coconut 40
Chocolate Chip (optional) 55

Instructions

  1. Bring all ingredients to room temperature. Sift flour. Line the baking pan with baking paper and preheat your oven.
  2. Prepare and weigh ingredients.
  3. Cream the shortening on Gear 3 until fluffy. Add in sugar teaspoon by teaspoon.
  4. Add in flavour and half of the oil bit by bit into the creamed shortening and sugar.
  5. Add in the eggs and the other half of the oil slowly.
  6. Continue beating the mixture until creamy and slightly fluffy (around 3 minutes).
  7. Stir in the dry ingredients.
  8. Fold in the shredded coconut and chocolate chips (optional).
  9. Scoop 14g of cookie dough, press it into the shape you want, and line it onto the baking paper.
  10. Bake the cookies for 40 minutes at 130°C. Note that the outcome of the cookies may vary depending on the type of oven.
  11. Let the cookies cool on a wire rack.
